Meatless Mondays

So 2 weeks ago I started doing a thing called "Meatless Mondays".  My hubby thinks that we have to have meat with every dinner.  If I make a vegetarian meal, he will choke down one small portion, then later in the evening make himself something else to eat.  So my strategy up until now has been to hardly ever cook a dinner without a meat main course.

Since we are encouraged to eat meat sparingly, I thought I'd start with 1 family dinner a week that is meatless.  Whether he likes it or not.  P.S. the kids are not too thrilled with it either, but too bad!!!  So sad!!!

Anyway, here's the problem...I don't really know a lot of things to make that are meatless.  Here are the ideas I have come up with so far...Meatless spaghetti, vegetable soup, chickenless alfredo, baked potato, salad bar.  That is honestly all I can think of!  Help!

Meatloaf

Here is my Mom's recipe for meatloaf...quick, easy, yummy!

1 lb hamburger (or thereabouts)
1 egg
1 can tomato sauce
1 C. oatmeal (more if you want to stretch it farther)
1 pkg. dry onion soup mix

Mix together with hands.  Bake in muffin tins for 30 min at 350 or loaf pans at 350 for 1 hour.  Near the end (last 5 or 10 minutes) squirt ketchup on top and finish baking.  Serve with ketchup or BBQ sauce!

Here is our new cooking/recipe blog.  Most of us are or have been in the same LDS ward.

This blog is public, so don't share any family info, etc... We can have 100 authors.  If you want to be an author send me an email.  If you don't know who "me" is, then ask around.  If you can't figure it out, then I probably don't know you!!!

Feel free to share pictures of food you made, recipes you like, ideas for picky eaters, questions like "what should I make for dinner?", etc...

On the sidebar we are going to have a list of other cooking/recipe blogs we like.  So if you have one (yours or someone else's) email me and I will add it.

We especially want cheap, fast, healthy, few ingredients, kid-friendly,etc...You know the ones I'm talking about.  Make sure to post your good old standby's, the ones you have memorized.  You might think everyone knows how to make sloppy joes from scratch...but we don't, we really don't!!!
