Lemonade Ice Cream Cake

This is one of my favorite summer-time desserts and it's super easy!!!

1 pkg. pecan sandies cookies, crushed (might not need whole pkg)
1 frozen concentrate pink lemonade
1/2 gallon vanilla icecream

Allow icecream and lemonade to thaw until softened (but not totally liquid).  Crush cookies and press them into the bottom of a cake pan (as thick as you desire).  Use mixer or hand mixer to blend icecream and lemonade together until well blended.  Scoop and spread icecream mixture over cookies.  Sprinkle a few of the cookie crumbles on the top for decoration.  Cover and freeze for a few hours until frozen (a minimum of 4 hours).  Serve frozen.

Note:   you can use the same concept with oreos and mint chocolate chip icecream.  When serving it this way drizzle with chocolate and carmel sauce and cool whip.

Lemon Bars

Crust
1/2 C. softened butter or margarine
1/2 C. powdered sugar
1 C. flour

Cream butter and sugar.  Add flour.  Spread in an 8X8" pan  Bake at 325 for 15-20 min.

While the crust is baking, prepare the next layer
2 eggs
1 C. sugar
2 T. flour
2 T. lemon juice
grated rind of 1/2 lemon

Beat eggs slightly.  Add sugar, flour, lemon juice and rind.  Mix well and pour over hot crust after it comes out of the oven.  Now bake at 325 for 15-20 min.  Remove from oven and sprinkle with sifted powdered sugar.  Cool slightly before cutting into finger cookies.  This recipe when doubled, fits just right into a jelly roll pan (10X15").  Good served with vanilla ice cream.

Note from Mikael:  I haven't cooked these, but I love lemon bars and really can you go wrong if it's from the Lion House?  So it is on my to do list!!!!

Cooking your clothes?!?!?!


So this is really more of a laundry tip than a cooking tip...but you do have to boil water...so here goes.

You know you see old pictures of black ladies with their hair tied up in a bandana stirring a big black kettle with their clothes in it.  Well this is basically the same thing.

To get stains out...

Boil two big pans full of water.  Pour them into a sink or into a bucket (placed in the tub).  Add stained clothes and 1 scoop of oxyclean powder.  Let sit for several hours (or overnight).  Stir occasionally (if you remember to).  Do not just add the oxyclean into your pan of hot water sitting on the stove (it will bubble over).

This truly works wonders.  It works really well on clothes that you missed and they went through the dryer with the stain.  And also on baby stains and hand-me-downs that you know you put in the box 3 years ago clean and now they are terribly stained.  It has worked for me on everything except crayon, rust and blood.

Make sure you do like colors because it will pull some of the color out.  ie:  I did a red shirt with a white shirt and the white shirt came out pink.

Souvlaki

I am super excited to try this recipe given to me by a friend. It looks way easy.

SOUVLAKI

SOAK 6 WOODEN SKEWERS IN WATER (SO THEY WON'T BURN WHEN YOU GRILL)
3 lbs. Turkey Breast (cubed)


MARINATE IN:
1 tsp. salt
1 tsp. pepper
1/2 tsp. garlic salt
1/4 cup oregano
1 cup olive oil
Cook on grill or broil, then dip in Lemon Juice

LEMON RICE
2 cups un-cooked long grain rice
4 Tbls. butter
1 tsp. salt
4 Tbls. lemon juice
1/2 medium onion chopped
4 cups chicken broth


In large skillet, saute rice and onions in
butter until glossy. Add salt, lemon juice,
and broth. Reduce heat, cover and cook
for 35 minutes or until done.
May add more lemon juice and salt to
taste.

CUCUMBER DIP
1 cup sour cream
1 cup greek yogurt
1 cucumber (grated) wrap in paper towel
to soak up remaining juices
2 tsp. fresh dill
1/2 tsp. garlic salt
1/2 tsp. salt
1 clove garlic (minced)
May add more garlic to taste.
Blend all together, Chill.


Serve with souvlaki, pita bread, chips, or
whatever.
