White Chicken Chili


6-8 chicken breasts, cubed
2 quarts water
3 Tbsp chicken bouillon
1 onion, diced
2 Tbsp butter
2 cloves garlic, minced
2 (4oz) cans green chilies
3 (15oz) cans great northern beans, drained and rinsed
1 ½ tsp salt
1 ½ tsp cumin
1 tsp oregano
1 tsp black pepper
½ tsp cayenne pepper
1 C sour cream
½ C whipping cream (or evaporated milk)

Boil the chicken and bouillon in the water.  In a skillet, sauté the onions in the butter. Stir in the minced garlic and cook for 30 seconds.  Put the onions and garlic in the chicken pot, then add green chilies, beans, salt, cumin, oregano, black pepper, and cayenne pepper.  Bring to a boil and simmer for 10-15 min.  Next, add the sour cream and whipping cream.  Serve.
