Italian Tortellini Soup


1 lb ground hot sausage
1 C onion, diced
2 cloves garlic, minced
2 quarts water
3 Tbsp beef bouillon
1 (14oz) can diced tomatoes
2 (8oz) cans tomato sauce
½ tsp basil
1 bay leaf
½ tsp oregano
2 C carrots, chopped
1 green pepper, chopped
20 oz cheese tortellini

In a pot, brown the sausage then drain the grease.  Add the onions and saute until translucent; add garlic and saute for 30 seconds more.  Add the water, bouillon, tomatoes, tomato sauce, basil, bay leaf, oregano, carrots, peppers and tortellini.  Simmer until vegetables are soft and tortellini is cooked through. (About 8-10 min).  Serve.
