Chicken Pot Pie

Ashley B. brought this to our family and we all loved it...even the kids!  So I asked her for the recipe and asked if I could share it here!  Here it is...

I don't have an exact recipe, but I can give you the basics.  Mine are usually a tiny bit different each time.

2 pie crusts (the recipe I use is below, you just want one that isn't really sweet)
2 large chicken breasts (or more, whatever you want)
1 lb bag frozen mixed veggies, thawed (or whatever veggies you want, broccoli, zucchini, sometimes I throw leftovers in)
2-3 C diced potatoes, cooked
(maybe eyeball your chicken, potatoes & veggies to make sure they fit in the pan)
1/4 cup butter or oil
1/4 cup flour
4 cups liquid (milk, chicken broth, water + chicken bouillon; I use half milk and half water+bouillon)

Mix pie crusts and refrigerate.

Cook potatoes if you need to (boil, bake, microwave), cool and dice.  Sometimes I use frozen diced hashbrowns, whatever, just let them thaw a bit while you work.  Set aside.

Cook chicken - sometimes I cook the breasts whole by browning in a pan then finishing in the oven, then dicing.  sometimes I dice then pan fry.  whatever is easier for my day.  Season well, I usually use Montreal Steak Seasoning, because I'm lazy.  Set aside.

Roll out the bottom crust and place in the bottom of a 13X9 pan.  It doesn't have to be pretty, it doesn't even have to come up the sides, really.  Par bake @ 400F for about 15 min.  This isn't critical, but it makes the bottom a little less soggy, and Frank doesn't like soggy bottoms.  I don't even bother with pie crust weights, half the time I don't even prick with a fork.  It will bubble up, but it'll sink back down when you put stuff in it.

To make the sauce for the pie, I use the dirty chicken pan.  Add butter/oil and flour, cook over medium heat for a few minutes, letting the mixture bubble but don't let it brown, at least not a lot, a little is fine.  Add your 4 C liquid slowly, whisking as you go, bring to a low boil.  Mixture should thicken slightly, but it'll still be pretty runny, because it will thicken up inside the pie.  Season to taste here - salt, pepper, more steak seasoning, poultry seasoning, thyme, whatever you like.  This is what your pie will taste like, make it good!

Assemble the pie - once the bottom crust is out, everything goes in it.  Sometimes I stir it all together, sometimes I layer, it doesn't matter at all.  Roll out top crust & cover pie, doesn't have to be pretty.  Bake on the center rack @ 400F for about 60 min.   Everything is cooked except for the crust, so you're waiting for the top crust to brown to your liking.  Just keep an eye on it after 45 min or so. Let sit for 15ish min before serving.

I've done the same pie with beef - just use sometime that'll be tender, or cook a pot roast until tender & dice.  And use seasonings for beef.



Pie Crust - I've used my food processor and stand mixer for this.  I'm not that careful to not overmix and it hasn't been a problem.  This recipe is for ONE pie crust, and I don't double it, I just make it twice.

1 1/4 C flour
1/2 tsp salt
1 Tbl sugar (I leave out or use less for a savory pie)
6 Tbl cold butter (I use salted), cut into 1/2 in pieces
1/4 chilled vegetable shortening, cut into 4 pieces
1/4 c ice water

Process 3/4 C flour, salt, sugar until combined.  Add butter and shortening and process until homogeneous dough just starts to collect in uneven clumps (dough will resemble cottage cheese with some very small pieces of butter remaining, but there should be no uncoated flour).  Scrape down sides of bowl, redistribute dough around blade/mixer, and add remaining 1/2 C flour.  Pulse until mixture is evenly distributed around bowl and mass of dough has been broken up. (I keep going until it looks like its all together, I don't worry about it).  Move to bowl, if using food processor.  Sprinkle water over the mixture, with rubber spatula, use a folding motion to mix, pressing down on dough until dough sticks together.  Flatten into a 4 inch disk, wrap in plastic wrap and refrigerate at least 45 min or up to 2 days.  (This recipe is wetter/stickier than any I've ever tried, but I can use tons of flour when rolling it out so that it doesn't stick, and it doesn't get too dry.)

Keto Stroganoff

Serves 1 (large serving)

45 grams heavy whipping cream
62 grams 1/3 lower fat cream cheese (I'm sure you could sub regular cream cheese...this was just what I had on hand)
57 grams mozarella cheese, cubed
110 grams 85% hamburger (weight after cooking)
148 grams zucchini with skin, spiralized

1.  Cook and drain hamburger, weigh out desired amount
2.  In separate pan combine whip cream, cream cheese and mozarella
3.  Cook cream and cheeses until all all melted
4.  Add hamburger and zucchini
5.  Cook for a few minutes until Zucchini softens

Fat 41.8
Protein 49

Crock Pot Taco meat

So yesterday a tried a cool new trick...
I put a chunk of frozen hamburger meat (never cooked) in the crock pot with some water and taco seasoning and it thawed the meat and then cooked it.

It was not faster than cooking it on the stove, but it saved on the dinner-time rush.

2 lbs taco meat (frozen---but I think you could do fresh/thawed also)
1 1/2 C. water
2 packets taco seasoning

Place all ingredients in crock pot about lunch/nap time. Cook on high until dinner. Every few hours break up meat and stir. When ready to eat...drain fat and water.

Store-bought Lasagna


My MIL brought us a store-bought lasagna tonight. It was a crazy day and I was so grateful for the help. I am not normally a big fan of store-bought lasagna's (stouffers and what-not). This one was really good. I would even serve it to company. It was a bit spicy, which I liked! But if your kids don't like spicy they might not be a fan. It was Kirkland All Natural Italian Sausage and Beef Lasagna. We cooked it in the oven, but it says that it is microwavable. Kirkland is the Costco brand (if I remember right). This was a smaller one. It said it had 6 servings and I would say that's about right. Try it! You'll like it!

Quick Chili

Here is a recipe I made up.

1 can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained

1 qt. bottled tomatoes, pureed in blender
1 lb. cooked hamburger

2 pkgs taco seasoning
a little chili pwd
liquid smoke, original flavor (by spices)
pepper
garlic powder

Warm to boiling, allow to cool slightly before serving.

Here is an alternate I made last night


1 can pinto beans, rinsed and drained

1/2 lb leftover taco meat


1 pkg chili seasoning (mine was McCormick)
liquid smoke, original flavor (3 shakes)
3-5 shakes garlic powder
3-5 shakes onion powder

It needed pepper.

It really isn't as hard as I used to think.  It is really fast.  Almost as fast as warming up a can of chili (if hamburger is already cooked) and waaaaay better.  Just keep tossing in seasonings that go with chili until the sauce tastes good!

French Dip Sandwiches (Au Jus)


Not one of the cheapest meals, but definitely one of the fastest!!!

Au Jus packet mix (79 cents each not on sale) ( I made 2 for 6 large buns)
Sliced Roast Beef from the Deli (about $6.99 /lb) (I needed 1 and 1/2 lbs for 6 large buns)
White cheese (mozarella, swiss, pepperjack, etc...)
Crusty Buns ($2.99 for 6 large)

Make Au Jus according to packet directions.  Add meat to Au Jus.  Bring to a boil.  Remove meat from juice and place in bun.  Place cheese on top.  Broil for a minute or so until cheese melts.  Ladle Au Jus into individual bowls.

Baked Beans

Ok...so this is not a BBQ recipe...but if you are going to a BBQ this is one of my favorite dishes.  These are my Mom's baked beans.

3 (15 oz each) cans of Van Camps Baked beans (remove small piece of fat from each can)
1/4 bottle BBQ sauce (any brand and any flavor)
1 lb. Jimmy Dean Hot sausage (comes in a tube)
1 large chopped onion
1/2 C. brown sugar
1/2 C. green pepper (chopped) (optional---I usually use, my Mom doesn't---good either way)
2 T. worchestershire sauce
2 T. mustard
1 C. apples (2 apples) (great way to use apples that are a little mushy)

Sometimes my mom adds in hamburger also I usually don't, but either way is good.  Brown sausage and onions (also hamburger and green pepper if using).  Mix remaining ingredients in a large oven safe pot.  Bake covered at 325 for 1 hour.  Refrigerate overnight.  Then reheat before serving.  You can freeze and reheat also.  These are 200% better if you will let them cool completely and then reheat.  So make a day ahead for best taste.  These are a little runny, so if you are taking to a party or something you might want to bring cups or bowls for people to put them in separately.  We love these so I always make a double batch.  We can eat these as a meal in and of themselves.

Fall-Apart Roast with gravy and mashed potatoes

This is the way my Grandma, my Mom and now me do roast.  It falls apart rather than slices.

1 chuck roast (you can use other kinds, but this is the cheapest and I think the best)
Prepared mustard
1 pkg Dry Onion Soup Mix

Smother roast with mustard, then sprinkle whole pkg of onion soup mix over top.  Cook in crock pot on high for 5 or so hours.

To make gravy...
remove roast from crock pot and place on plate or platter.  Pour drippings into a pan.  Put roast back in crock pot to stay warm.  Add as much water to the drippings as you want to stretch it.  (I only do a cup or 2, but you could do much more).  Heat until boiling, then lower temperature to medium.  Add salt and pepper to taste.  It will take quite a bit of each.  It will taste good when you taste it.  If it is blah---then add more S&P.  In a cup mix some water and either cornstarch or flour, use a whisk to get rid of lumps.  Add some of the hot drippings to the cornstarch or water mix to warm it up a bit.  While stirring drippings with a whisk, slowly pour in the cornstarch or flour mixture.  Over the next few minutes it will thicken.

To make mashed potatoes...
Boil potatoes (or use pressure cooker for 3 minutes---my favorite way because it is soooo much faster).  Drain.  Put in large bowl.  Always add butter/margarine and S&P.  Then add other dairy products like milk, sour cream, cream cheese, etc...  Start mashing.  I do mine by hand, but you can use a mixer instead.  I like mine a little chunky, but just keep mashing until the are the desired consistency.  For creamier potatoes use more of the add-ins, for healthier potatoes use less of the add-ins.  You can also add shredded cheese, garlic powder, etc...
