Christianne's Lemon Cake
This recipe is one of Christianne F's recipes, so you know it has to be good.
1 lemon cake mix
4 eggs
1 1/4 C. water
1 small lemon jello (4 serving size)
3/4 C. oil
Preheat oven to 350. Mix all ingredients. Pour into a greased cake pan (metal is better than glass because it is slightly larger so cake will be a little thinner). Bake at 350 for 30-40 min. Cool slightly. Pour glaze over while still a little warm.
Glaze
Mix about 3 C. powdered sugar with lemon juice until you reach the desired consistency and amount.
(About 7 T. lemon juice). Mix glaze really well before pouring over cake.
If you make glaze thin it will soak into the cake and it is sooooo yummy.
Serve small pieces, it is really sweet.

Monster Pancakes / Hootenannies / German Pancakes
I had these once when I was a tween or a young teenager when I slept over at my Aunt's house. I had forgotten about them until I dreamed about them the other day...hahahahah. So I googled a recipe and made them for dinner tonight. They were a hit...everyone gave them 4 out of 5 stars...even the hubby...I mean...even the kids. Hahahahaha. (Both hubby and kids and myself gave them 4 out of 5 stars).
They were super easy. Really fast. Quite cheap. Not very many ingredients. Very filling.
Win, win, win, win, win!
They get really big in the oven and then fall when you pull them out of the oven.
Other reviewers thought they tasted "eggy", but no one in my family thought so.
I did warm my family before we ate that even though they are called pancakes, they do not taste like pancakes, that they need to expect a whole new food.

1/4-1/2 C. butter (some people even use up to 1 cup) (I used 1/2 and it was great...I would try 1/4 next time just to see if they still turned out good)

Instructions
1. While oven is preheating to 425 degrees, melt butter in a 9 X 13 pan.
2. Mix remaining ingredients in a blender.
3. Remove hot pan from oven and pour batter into melted butter
4. Bake 15-20 minutes (They will rise, but won't overflow)
5. Cut into squares and serve with normal french toast toppings. One traditional topping is lemon juice and powdered sugar on top. (We really liked the lemon juice and powdered sugar, they almost tasted like lemon squares.)
Serves 8 (I only needed 1 pan for my family of 6 eaters and we had leftovers).

Rice Bowls
Hilary P. served these cute appetizers at the 2018 Girls Night Out Progressive Dinner.
They were so fun and really yummy.
First she prayed a cupcake pan with pam and put the wonton skins in the holes and then sprayed the tops with pam again. She baked until lightly browned. Wonton skins (wonton wrappers) can be found in the produce section of grocery stores.
She placed some cooked white rice in the little bowls.
She topped the rice with Panda Express Teriyaki Sauce (Walmart carries it).
The meatballs were Aidells Teriyaki and Pineapple (from Costco).

Homemade Mayo

From "Well Fed" and "It Starts with Food"
1 1/4 C. light olive oil (it must be light), DIVIDED
1 egg @ room temp (or 3 minutes in warm water)
1/2 tsp mustard powder
1/2 tsp salt
1/2 to 1 lemon, juiced @ room temp (it takes several hours to overnight)
1. Place the egg, 1/4 C. oil (NOT ALL) and spices in blender
2. Blend thoroughly
3. Slowly drizzle in remaining oil, while mixing
4. After thoroughly mixed, add lemon juice to taste

Britney's Rotel Sausage dip
I served this at the 2017 Progressive Dinner
1 tube ground sausage (not spicy)
(1) 10 oz can Rotel tomatoes with green chilies (mild)
1 package cream cheese (I used 1/3 lower fat)
Brown sausage and drain. Add other ingredients. Cook over medium until cream cheese is melted. Serve immediately or put in fridge and warm up in microwave when ready to serve or put in crockpot on warm until ready to serve.
Serve with tortilla chips or crackers or celery.

J.P.'s Big Daddy Biscuits

favorite. They are fat and yummy. Top with butter and honey! Or dip into soup!
2 C. all-purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1 Tablespoon white sugar
1/3 C. shortening
1 C. milk
Preheat oven to 425 F.
Whisk dry ingredients in a large bowl. Cut in shortening until it resembles course
meal. Gradually stir in milk. Turn out on a floured surface. Knead 15-20 times. Pat or roll dough out to 1 inch thick (do not

Parmesan Chicken
This recipe is taken from an old ward cookbook from K. Dabb
4 chicken boneless skinless chicken breasts, cubed
1/2 C. melted butter
1 C. Bread crumbs (I usually use italian)
1/2 C. parmesan (I just use the cheap green can stuff)
1/2 C. Shredded cheese
2 tsp. basil
1 tsp. salt
1/2 tsp. pepper (I use coarse)
Dip cubed chicken in melted butter. In separate bowl combine rest of ingredients. Roll chicken in dry ingredients. Place chicken on a cookie sheet. Bake at 400 degrees for 10 minutes.

Biscuits
These were amazing. I have tried probably 5 different biscuit recipes and can finally end my search.
Makes 6 grand sized biscuits
2 C. flour
1 T. baking powder
1 tsp. salt
1 T. White Sugar
1/3 C. shortening
1 C. milk
Directions
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl (you might not need all of the milk).
- Turn out onto a floured surface, and knead 15 to 20 times--do not over-knead. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.
- Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.
- These were 8 Weight Watchers points plus each--Ouch! But oh so yummy!

Teriyaki Sauce
This is a nice thick teriyaki sauce.
1/4 C. soy sauce
1 c. water
1/2 tsp ground ginger (I used the dried spice kind...not fresh)
1/4 tsp garlic powder
5 Tablespoons packed brown sugar (I reduced it to 1/4 C. which is 4 T just to lower the sugar content and it tasted great)
1-2 T. honey (I missed this when I was reading the recipe---So I didn't add this either)
2 T. cornstarch
1/4 C. cold water
Mix all but cornstarch and 1/4 C. cold water. Heat until boiling. Reduce heat. Mix cornstarch and water separately. Add corstarch to 1st mixture and heat until thick.

Chocolate Peanut Butter Smoothie
Last year we bought a BlendTec blender and we love it! This smoothie is really good and easy to make:) I usually double it and add more honey.

Alternative Hawaiian Haystacks
Last night we made Hawaiian Haystacks. But first off I was out of chicken. Secondly I had left over ham and cooked ground sausage. So we had hawaiian haystacks with cubed ham and ground sausage instead of chicken. I loved it. I think I liked it better than chicken.
As a side note, I was also out of pineapple so we did not have that as a topping. I think it would have been good though.
The toppings we had on hand were...
rice, ground sausage, cubed ham, grated colby cheese, coconut, gravy (Cream of chicken soup with a can of milk), crunchy chinese noodles.
For my family of 5 eaters...I made two cans of soup with 2 soup cans of milk...it was just right.

Cheeseball Recipe
Copies of this recipe were out on the RS table...I don't know whose recipe it is or why it was out...but I swiped one and am sharing it with you.
1 pkg cream cheese
1T. worchestershire sauce, or according to taste
1T. milk
Green onion, chopped into small pieces
Chipped/dried beef, chopped into small pieces (found by the canned meats, it will either come in a package or in a small glass jar.)
Mix the first 3 ingredients until it is a smooth consistency. Add green onion and dried beef according to your liking. This recipe will make one small ball. If making for a party, I would double it.

Cheese Enchiladas or Casita Burritos

My favorite mexican restaurant was Casa Melinda's in Bountiful. Painfully it no longer exists. We would always order their cheese enchiladas. After years of experimenting this is the closest we can come to their delightful cheese enchiladas. And they are pretty close.
Shortening
1 can mild red enchilada sauce (soup can size)
2 T. flour
Colby Jack cheese shredded or monterey Jack and Colby Jack
Sauce
Take 1 can enchilada sauce and add 1 can water in a saucepan. Bring to a boil. In a separate bowl combine 1 C. water and 2 T. flour. Stir until not lumpy. Once red sauce has boiled, add a little red sauce to your flour mixture to heat it up a bit. Whisk flour mix into red sauce and cook on Medium-High heat until gravy consistency. (I didn't have enough time tonight because Jason had a mtg...so in my pic the sauce is runnier than normal).
Cooking the tortillas
In a frying pan melt some crisco. Cook a corn tortilla for a few seconds on each side, do not let them get crispy. Set aside tortillas on a plate covered with paper towels until you have cooked enough tortillas as you need.
Assembling the enchilada
Take a tortilla and fill with cheese. It is best if you use 3/4 monterey jack and 1/4 colby. But often I just use colby because I don't want to buy two kinds of cheese. Roll the tortilla and place it seam side down on an oven safe plate. Top with enchilada sauce and then sprinkle more cheese on top. We usually do 2 enchiladas per plate.
Baking
Place our plates (oven-safe ones only) with the prepared enchiladas in the oven at 350 degrees for 8-10 min. Remove from oven with a hot-pad. Plates and food will be VERY VERY hot.
Serving
Serve with sliced lettuce, sour cream, salsa and corn. If you wanted to you could put refried beans topped with cheese on your plate before baking (my family doesn't care for them).
When Casa Melinda would bring you your plate they would say "The plate is hot". So as our family joke we always say that too. (and the plate is VERY hot.)
Okay, so that is Cheese Enchiladas. Now on to Taco-Time's Casita Burrito's...
Casita Burritos
Make the same sauce as above.
Put refried beans and taco meat inside a flour tortilla (only a little bit of beans and meat...not very much). Roll up. Place on oven-safe plate seam side down. Top with sauce. Cheese on top. Bake in oven (on plate) at 350 degrees for 8-10 min. Remove plates with hot-pad.

Granny's Biscuits
A while ago, I made some homemade chicken noodle soup (for the first time!) in the crock pot and while perusing online for a good recipe, everyone said that you have to have biscuits with chicken noodle soup. I’m pretty decent at rolls, but I’ve never made a biscuit in my life.
I researched and compared and researched some more and found, what I think, is an amazing recipe. And easy! Which we all know I’m a big fan of. :)
Granny’s Homemade Biscuits
2 cups all purpose flour
1 tablespoon baking powder (aluminum free if you have it)
1/2 teaspoon salt
2 tablespoons sugar
1/4 cup butter or margarine
3/4 cup milk
1 tablespoon baking powder (aluminum free if you have it)

Combine all dry ingredients and blend well with a whisk. Cut in butter (if you don’t know how to do this, click here) until resembles coarse bread crumbs. Stir in milk until all comes together to form a dough ball. Turn out dough ball onto a well floured surface. Let set for a couple of minutes and pat out to about 1/2″ thick. Cut biscuits with floured biscuit cutter and place into ungreased baking pan. Form remaining dough into ball and repeat until all dough made into biscuits. This recipe will make approximately 12 biscuits. Bake in 425-450 degree oven for 12-15 minutes.
Note: This recipe freeze well too. Just place your cut biscuits onto a cookie sheet lined with wax paper or parchment paper and place cookie sheet into freeze making sure to keep level. Once frozen remove and place into a freezer bag and place into freezer. When ready to use just follow baking directions and bake only the amount that you need, you do not have to bake all of them at one time.
Some personal notes from experience:
It says to use a floured biscuit cutter-I didn't. I used a metal, fondant cutter I have and I never floured it. Worked like a charm. You could also use a metal canning lid or anything you have laying around! Also, a lot of different women said that, with biscuits, the less you handle the dough the better. Just FYI. A few sites said to use aluminum free baking powder, others didn't specify. I happened to have it on hand so that's what I have been using the last couple of months that I've been making these. And lastly, it really does only make about 12-14 biscuits. You will think that sounds like plenty...until you taste them. If you have a big family (meaning more than two people) you'll want to double the recipe. Just know that it does take a lot longer to cut the biscuits out with double the dough.
Oh! And one more thing - another blogger said that the biscuits should always have their sides touching while baking. She said that it helps them rise better...don't ask me why. This pic is from the first time I made the recipe and since then I have tried it with ALL of the sides touching and it works great. So, make sure they're all connected. :) Enjoy!

Bean and Bacon on Toast
This is one of those "I usually have all of the ingredients on hand that is good, cheap and filling...but I really wouldn't serve it to company". You can have the whole dinner on the table in less than 5 minutes.
Toast your bread. Top with Campbell's Bean with Bacon soup. On top of that add grated cheese, sour cream salsa and lettuce (I didn't have any lettuce last night for the picture).
Notes: I like Campbells a lot better than generic bean n bacon.
I only add 1/2 can of water to the soup instead of a full can.
I add a T or 2 of brown sugar to the bean and bacon
It is also really good wrapped in a tortilla.

Lasagna
1 lb hamb.
1/2 yellow onion, chopped
lasagna noodles
spaghetti sauce
cottage cheese
mozarella, grated
Brown hamb with onion. Drain and rinse.
Spread a little spaghetti sauce in the bottom a glass 9 X 13 pan. Put 3 uncooked noodles on the sauce. Cover noodles with a little sauce. Then half of the meat. some cottage cheese, some mozarella, noodles, sauce, meat, cottage cheese, cheese, noodles, sauce, cheese.
Bake covered with foil at 350 for about an hour to
an hour and a half (when you poke with a fork the noodles should be very soft and easy to poke through). Remove foil and bake for 10 more minutes. Remove from oven and let sit for 10 minutes before cutting.

Philly 3 step No-bake Cheesecake
I fell in love with this recipe while I was in college and I still make it today. It was off the back of a cream cheese container. (Hence the reference to "philly" for Philadelphia cream cheese). It is not like cheesecake from the cheesecake factory (it is not baked) so don't expect that. But I think it's a fast yummy dessert.
Prep time: 10 Min
Baking time: none
Refrigeration time: a few hours
Serves: 8
1 (8 oz) cream cheese, softened
1/2 C. white granulated sugar
2 C. thawed cool whip
1 graham cracker crust (or make your own by crushing graham cracker, placing in bottom of pie tin and drizzling with melted better or margarine and baking for a bit)
1 can (20 oz) cherry pie filling (or I like raspberry---just personal preference)
Mix cream cheese and sugar. Stir in cool whip. Spoon into crust. Top with pie filling. Refrigerate until ready to serve. (probably want to give it an hour or two in the fridge before serving).

Sloppy Joes
1 lb hamburger
1 onion, chopped (or dried onion)
1 can tomato soup (do not add water)
about 1 T. brown sugar
about 1/2 T. prepared mustard
about 1/2 T. worcestershire
Brown hamburger with onions. Add remaining ingredients. Heat through. Change amounts to taste.
Serve in any of the following ways:
-on buns
-on rice
-on baked potato
-on bread or toast
-OR MY ABSOLUTE FAVORITE WAY... in a tortilla with sour cream and lettuce wrapped up. (Can also add salsa on top...but I usually don't). Wrap up like a burrito.
Jason always likes to add cheese and mustard on his sloppy joes (on buns).
Amounts listed above would serve about 4 people 1 sloppy joe each.
